Meatloaf, smeatloaf, double-beatloaf. I LOVE meatloaf.

Yes, I just quotes A Christmas Story.  Hey, Christmas in July is quickly approaching, no?
For some odd reason I was craving meatloaf today.  Maybe it was the craving for comfort food.  Maybe I needed to protein.  Maybe I needed the deliciousness!
No, this isn’t your Mama’s meatloaf!
I found the inspiration here.  Mine kind of turned out to be a layered veggie/meat stack because the filling was just spilling out!  Inside the meatloaf was spinach, onions, garlic, Italian bread crumbs, Worcestershire sauce, egg, ketchup and roasted red peppers.
I actually roasted the pepper on the grill myself.  What a great decision!  It was so stinking good.  I’m definitely going to do this more often.
Believe it or not, meatloaf was once my favorite food.  Every year on our birthday my mom has us pick our favorite meal and mine was always meatloaf and cheesecake as my birthday cake.  So maybe I’m just converting back to my roots.
This bad boy was juicy, flavorful and deeeelish!
I also made some Freakishly Fantastic Faux-Fried Zucchini.

These babies are crispy and moist at the same time.  Is that even possible?! Oh yes it is. Dipped in some grainy mustard.
Overall, I was totally digging this meal.
And then at work today one of the owners slapped these bad boys on my desk.  I looked at him like, are you kidding me!?  Are you kidding me because they look so delicious and are you kidding me because I am really trying to not eat stuff like that!!! So I treated myself to one pretzel, gave a bajillion away and then put the rest up at the front desk.  I just can’t deal with temptation.
So for real, no dessert tonight!

Taste the Rainbow.

Today’s lunch is colorful :D
My lunchbox includes: a Trader Joe’s chili lime chicken burger topped with multi colored cherry tomatoes and basil, a roasted sweet potato and some edamame.  A rainbow of colors!
As far as I am concerned, the more colorful, the healthier!
And after this past weekend of indulging, I needed some simple, healthy food!
Everything on my plate was delicious and pretty simple.  Although I do have a taste for fancy food, it is nice to eat things in their purest form.  No spices, no nothin’ :)
And so my marathon day of work continues, because I am staying until about 7:30ish.  Mondays are brutal!  Is it bad that I’m dreaming about sleep already?

Flipping for Flapjacks

Mornin!  Although I would like to say that I am refreshed and ready to go…I’m still pretty sleepy!  I have such a hard time actually going to sleep at night.  I will try to be in my bed at a decent time but something always detracts me!
This morning’s breakfast was a tasty one!  I made Hungry Girl’s banana pancakes :D  If you have never heard of Hungry Girl – she is awesome!  Her real name is Lisa Lillien and she is a creative woman who has branded herself as Hungry Girl.  She creates awesome low fat/low cal recipes and suggests alternatives to unhealthy treats.
According to the recipe, you are supposed to make 5 small pancakes but I’d rather have one big pancake!  I also made it into a non pancake-ish shape.  It looks more like an omlette!
Drizzled with some peanut butter, ohhh my goodness!  And some orange slices on the side for some vitamin c!
I’m going to try to get through the morning without any caffeine but I think I might have to cave in!  I normally get to sleep in on the weekends but this weekend was just too crazy for sleep.
