All I Eat Food!

Well, not until tomorrow

Luckily, the treat I received at work today was healthy!

My coworker, Beth, gave me this refreshing bottle of mandarin orange sparkling water, ahhh.

As much as I enjoy the chocolate treats, I was happy to have something more low cal!

After work I quickly changed and ran a quick mile! Then I headed to a lifting class called Rush Hour.  It is similar to Body Pump but less repetition and more variety.  I haven’t gone in over a month and it was definitely a challenge!  By the time I was gone my legs were shaking.

I hurried home for dinner where I made Trader Joe’s pot roast, Israeli couscous and green beans.  And a glass of homemade iced tea!

Israeli couscous is so tasty!  I added pine nuts and chicken broth to my batch.  And I toasted the couscous before adding the liquid to add some nutty-ness.

I’m not huge on red meat but ah, so tender and flavorful.

Fresh beans. No salt, no nothin’.

Great home cooked meal!

While I was making dinner I also made a treat to bring into work

Homemade white bean hummus!

If I can remember correctly…

• 1 can of white beans ( I used a little less because I had used some from the can already)

•1 clove of garlic

• 1 teaspoon of oregano

•1/2 tsp cumin

•1/4 cup chopped g reen onions

•2 tablespoons fresh lemon juice

•2 tablespoons of tahini (which I left  out because I didn’t have any)

Throw it all in the food processor and…

Nom! Grab a chip and get dippin!

And for my final activity  of the night…

All packed and ready to go to Daytona Florida to see my best friend

Maybe I’ll learn how to surf?!?!

Thank goodness there was some leftover stromboli

I sliced the baby heirloom tomatoes and put them on my ‘boli and munched on the pretzels on the side.  Something about slicing those tomatoes up ahead of time just gets to me!

For some reason, things just look more appealing wrapped in waxed paper!

Maybe it’s because it makes me feel like I’m at a restaurant

And I had to share my raspberries at lunchtime because they were on the verge of spoiling.  The only thing that I don’t like about them is how fast they go bad!

Come on, open up!

I’m debating on staying at work to take a class afterwards or just heading home and going for a run.  I’m making dinner for the fam tonight so I’m thinking about how I’ll budget my time. 

So why the anticipation?  Well, I was pretty excited for my lunch, but…

I leave for FLORIDA to visit one of my bestfriends…TOMORROW!

Good morning! Happy Hump Day!

This morning’s breakfast is on the gooo! I have yet to find a soy milk that I like.  I’ve tried plain and vanilla and I don’t know it just hasn’t been to appetizing so far.  But I’ve heard that chocolate soy milk is delicious so I’m going to give it a try.  And it’s Trader Joes and usually Joe doesn’t disappoint

I also broke open another one of my presents from Chelsey! I intend to smoother my banana with Justin’s amazing honey peanut butter.  I’m already looking into buying a bunch of these packets!

And today I even made my own coffee! It was a special blend from Jamaica!  I’ve tried it, and it is good, but not as good as it was in Jamaica.  I wonder if it has something to do with not sipping it while staring out at the clear blue ocean and palm trees…
