Home cooked.

I was planning on going to my gym at home but my friend and coworker, Beth, asked me to work out at our gym.  So I figured, what the heck!
I actually worked harder than I have in a long time!
I did:
•1 mile  running at 5.5 mph
•12 minutes alternating from 4mph to 10mph every 30 seconds
•1 mile
It felt good :D
Then when I got home I was treated to my Mom’s home cooking yet again!
A whole plate filled with goodness!
Chicken cutlet.
Fresh salad with creamy balsamic dressing.
Zucchini.
Two things mashed! Mashed cauliflower and my Mom’s mashed potatoes.  It was fun to have a taste test with the two side to side.  I hate to be so indecisive but they were each so delicious in their own way!  My Dad said he preferred the cauliflower!
After dinner we went mini golfing!  It was my brother’s request because he is leaving for college next month and wanted a family gathering.
I claimed to be a terrible golfer, but apparently that is not true.  I won!!  Which was kind of a shock to everyone because my Dad and brother play golf and I’m not all that athletic.
Then we went for ice cream!
I had a frozen yogurt twist with a pretzel cone!
I had been dying to try this cone for awhile! So glad I did :D I love the sweet/salty combo.
It was great to spend the night with my family.  I wish my sister could have been there but she is preparing for her wedding!
And now I’m going to go do this:
In preparation for my tooth procedure coming up!

Cauliflower power

When you have a head of cauliflower lying around and don’t know what to do with it…
Turn cauliflower into mashed potatoes :D
This is one of my favorite recipes because it is easy, simple and healthy.  I’m sure there are tons of recipes floating around for this kind of thing but this is my own rendition.  You can find the simple recipe here.
So today, I had some of the ‘taters for lunch!
I love how filling these are!
I also created this delicious dish!
I mixed Trader Joe’s pulled barbecue chicken with some farfalle, tomatoes, and mozzarella and sprinkled some oregano on top!
And oh my yum, it really was as delicious as it looks!  I have never had anything barbecue with pasta, but I thought, why not?!  It made the meal more filling and the chicken go further.
Luckily, I still have 2 more servings of this chicken because I am dreaming about it.
On the agenda for tonight!

♦Try to get some running in
♦Have dinner with the family
♦Then mini golf :D

Ice cream for breakfast.

Could it be true?!
Yes, indeed.  Well, banana soft serve.
I’m sure everyone in the blog world is aware of what banana soft serve is but for those of you who aren’t!…
All you have to do is peel a banana, put it in a plastic bag and freeze it overnight or at least for several hours.  Then you just chop it up, put it in a food processor and let it do its thing for about 2 minutes.  Next thing you know you have creamy, icy, banana soft serve!
I topped mine with a juicy sliced plum and some blueberry muesli.  Banana, peach, and blueberry, oh my!
It really does look like ice cream :D   Something about ice cream and something crunchy/cakey really does it for me!
I also stopped and got some coconut iced coffee and thank goodness because I was really losing my cool on the highway this morning when my low fuel light went on.  I’m pretty sure I held my breath the whole time.  It makes me so nervous!  But I was the fool that drove to work without filling up my tank, whoopsie :oops:
