Hammie Sammie.

After work I headed out for a 5 mile run.  Like I said before, I was supposed to do 5 miles but only did 3 so I definitely had to complete 5 tonight.
Luckily, this guy came in the mail!  No I did not run at 10:00 at night.  I just forgot to take a picture earlier :)
The watch is made by Tech 4 0, which is a company I found on Amazon.com.  I didn’t want anything super expensive or fancy and this watch is no frills but exactly what I w anted.
In fact, I picked out the men’s watch!  I did this on purpose.  I would have liked a pink watch but they didn’t have any cute shades of pink so I went with the standard black.  Plus, I paid $35, whereas some of the watches went up to $200.  This watch was $70 on the Tech 4 0 website.

I looove sandwiches.  There is no denying that.  So when I came back from my run good and hungry I decided to  make a tasty sandwich.

Grilled ham and American cheese on rye bread with grainy mustard and tomato slices.

With a side of homemade sweet potato fries.  To make them I cut them into chunks and put them on a piece of foil drizzled  with olive oil and baked them at 450º for 20 minutes.
Yummy in my tummy!
After dinner I chatted with my cousin who is staying with my family while her apartment gets ready.  Her dog is staying with us too!
I really did try to get a picture of the two of them together, showing their faces but to no avail!
Thank goodness tomorrow is Thursday!

Easy eggplant.

Last night I stopped at a produce stand close to my house and snagged a bunch of veggies.  I couldn’t resist picking up an eggplant but I wasn’t sure what I was going to do with it!?
Eggplant parm it was!
To make the eggplant parm I used a vegetable peel to create ribbons of eggplant.  I then sauteed the eggplant in a pan with a little olive oil.  I topped it with my fresh tomato sauce and a little mozzarella and delicious-ness was created!  Quite easy and a great way to get my favorite food when I don’t have time to make a whole pan!  Plus I cut out the breading and oil that it is normally fried in.
With some roasted potatoes and red pepper.
And some little hot dogs…kidding :)
Mmm it was a great lunch!
I packed a snack for later this afternoon.  Some leftover popcorn and carrots.
I have another run planned for this evening.  I really need to do 5 miles because I was supposed to do it last night but stopped at 4.  I just wasn’t feeling that extra mile and didn’t want to push myself, although I probably should have.  But I’m pumped to go the extra mile today…literally!

Oatmeal pancakes?

I decided to try something different for breakfast this morning.  When I consulted my stomach and thought about what I wanted it was between oatmeal and pancakes.  So…I combined both!
I mixed a 1/2 cup of oatmeal, 1 banana, 1/3 cup of skim milk and a blob of peanut butter.
Once everything was combined, I packed the mixture into two patties and threw them in a pan.  I let them get crispy on each side and voila!
Topped with some cocoa butter.  I put them in the fridge for a few minutes so that the cocoa butter could harden.
With some strawberries on the sideee.
I’d call my experiment a success :)
