So why is it that shorter runs seem to be a lot harder than long runs? Yesterday’s 3 mile run was pretty brutal. I’m thinking that the heat was to blame. I ran before dinner and the sun was still out and blazing. Not to mention it was muggy. But geez, my legs felt weak and I was not in the mood to run at all. Nevertheless, I pulled through and kept going. I was thankful when it was over

Meatloaf made my Gram, salad made by Mom, eggplant made by me!
I had half of a small eggplant in the fridge that I wanted to use up so I sliced it up and sauteed it with a little olive oil and a Parmesan blend seasoning.
We got this as a gift from my brother in law and it is super delicious. Best part about it that there are 4 different flavors in the one container!
Oh the possibilities! It really added a great deal of flavor to the eggplant.
The best part of my grandmom’s meatloaf is that she puts peppers in it!
Then last night my mom and I went out to run errands for the 3rd night in a row! We both laughed at how funny it is that we’ve been doing this all week. I’m hoping that tonight I can get into bed at a decent time.
When we got back from running our errands we made some zucchini bread.












That eggplant looks good! I find shorter runs are harder too!!!
