Whaddaya know Joe?

I am so sleepy!  Maybe it’s because I didn’t have iced coffee this morning?  Or maybe it is because I just need more rest.
So for lunch today I had a little Asian flava.  Well, kinda.
Trader Joe’s Mandarin chicken over rice and green beans.
I loved this chicken! So many ways you can cook it and it is super tasty and easy.
Then after work I went for a 2 mile run inside, then Beth and I walked outside!
It was nice to chat outside of work and just enjoy the weather!
For dinna we had sloppy joes!  It has been such a long time since we had these!  When we talked  to my brother who is at college he said, ew gross.
I had mine on half a powdered roll.
And a stuffed pepper.  I looove stuffed peppers. They are really simple to make too.
Just cut the top off and pull out the seeds, making sure you keep the top.  To make the stuffing combine tomato sauce, Italian bread crumbs and parmesan cheese.  When everything is mixed, stuff the pepper and place the lid back on the pepper.  Drizzle with a little olive oil and bake at 350° for about 20 minutes.
I’ve been so sleepy so it’s time I get some rest!

Morning!  I get increasingly sleepy as the week goes on.  I’m sure I’m not alone!
My stomach was actually grumbling when I woke up today so some peanut butter was necessary.

I had peanut butter and banana sandwich on an Arnold flat!  With a sliced peach.  Poor peach was on its way out and had to be eaten today or it was going to go bad.  Good thing I saved it :)

I’m looking forward to my 3 mile run today!  I like when I can pump up the speed and finish faster!
