Strawberry pretzel salad. Have you ever tried it? Until a few weeks ago I was a newbie to this dessert as well. And I kind of thought I wanted it to stay that way. Pretzels, strawberries, jello…all mixed with cream cheese? Sounds kinda gross, I will admit.
But looks can be deceiving! And after one bite…well, it was love at first bite.
I thought this recipe would be perfect to share around Valentine’s Day and while there is a more decadent version of this recipe floating around, I made some alterations and made it more waist friendly.
You will need:
•1 cup pretzels
•2 TBS smart balance, melted
•2 3 oz. boxes of strawberry jello
•1 cup fat free Cool Whip
•1/2 cup fat free cream cheese
•1/4 cup Splenda
•1 10 oz. container of frozen strawberries (or fresh if you prefer!)
Preheat oven to 400 °
1.) Begin by doing everyone’s favorite kitchen task, smashing the crap out of the pretzels.
Or am I the only one that gets excited when I see the word “crush” in a recipe?
2.) Combine pretzels and melted smart balance in a pan or dish and bake for 10 minutes.
3.) While the pretzels are baking, prepare jello according to regular recipe and let cool to room temperature. When jello has cooled add strawberries.
4.) Meanwhile, combine Cool Whip, Splenda and cream cheese until well blended and fluffy.
5.) When pretzels are done, let cool. Add cream cheese mixture and spread evenly
6.) Add strawberry mixture and spread evenly.
Refrigerate for at least 2 hours but overnight is best.
Slice and enjoy!
Take one bite and you’ll understand why this unusual combo tastes so good. And you won’t have to feel guilty

Unusual combinations can sometimes be the best – I always got weird looks from my friends when I would eat pretzels, white chocolate chips and dried apricots together (I thought it was pretty normal) but then again, they’d never even heard of trail mix Australia is SO boring!
