I didn’t finish work until 20 minutes after I usually leave today. So as soon as I finished I booked it upstairs and jumped on the treadmill. I had planned to run 5 miles and I did it :D I haven’t exercised with my workout buddy, Beth, in so long and it was glad to be back doing our thing. I felt really good after my run. And guess what…I wasn’t even sore today!
My family had already had dinner when I got home so I was on my own. Luckily I had something planned :)

It was really tasty. My dad even tried some and liked it!
The recipe actually calls for ground beef and I was going to use ground turkey but remembered I had some frozen sausage at home. It gave it such great flavor!
With a simple salad on the side.
After dinner I ran some errands with my mom and then relaxed.
Yummm! This was my massive salad that I had for lunch, from my fav spot, The Couch Tomato.
In the salad: mixed greens, grilled chicken, strawberries, mozzarella cheese, pecans, cucumbers, and portabella mushrooms! Amazing combo and so much stuff that no wonder why it is called the food pyramid!
And yes I have recreated this salad but it always tastes better when someone else makes it!
Ok so maybe that is a little dramatic, but I’m glad Jay is back safe and sound!
How convenient that the sun came out this morning now that he is home :D!
Last night I went out to run some errands with my mom and we discussed that we don’t have any junk food around now that my brother is in college. That also means the cereal supply needed to be restocked with something that wasn’t sugar laden.

Evening! Tonight was my late night at work so dinner was pretty simple.
Creamy coleslaw. Crunch grapes. Savory roasted chicken, tomato slices, little bit o’ mayo on some toast.
I’m not quite sure how I’m going to survive without fresh summer tomatoes!
Tonight was also my night off from running, which felt good. Surprisingly, I am not in any kind of pain today! Jay said I should feel something tomorrow so we will see. I guess that means I’m in decent shape if I feel good!?
Jay comes home tonight!!! He had a great time in Vegas and I’m glad he is east coast bound. Too bad I won’t get to see him until later in the week.
Sometimes all I want for lunch is a good old sandwich.
Rye bread with ham, American cheese, grainy mustard, lettuce and banana peppers.
With a side of red peppers and honey balsamic dressing to dip!

Really easy and nutritious. I was kind of craving chips because everyone knows that chips go amazingly well with sandwiches, but the peppers were obviously a healthier choice.
Yesterday I completed a 9 mile run!!! I was super tired but really proud of myself. My legs were pretty tired and my feet were achy but I was glad I finished. Since I’ve been training my legs haven’t really felt like that, but maybe it is because I haven’t pushed myself as hard as I did. When I finished I had to keep walking for awhile just to get them to calm down!
My stomach was growling before I even got out of bed this morning!
Some oatmeal was needed :)
In my oatmeal:
•1/2 cup oats
•1/4 cup water
•1/4 cup skim milk
•craisins
•walnuts
•peanut butter
•chia seeds
•banana!
Yumm so tasty and filling!
Kinda tasted like PB&J with the craisins and peanut butter. Oh and I topped it with some light brown sugar :D
I’m feeling well rested this morning and I’m ready for a day at work!
On my way home from my full time job I stopped by Wegmans to pick up some goodies for dinner last night!
I picked up a really cute cheese platter that I shared with my OG coworkers. It included blue cheese, Gorgonzola, almonds, walnuts, and salami. I loved this idea!
I also made my own salad at their vegetarian bar. The highlight of this salad was the mushrooms! And the balsamic grilled peach of course! It was so amazing and flavorful. I will definitely try it again and possibly attempt to make it at home.
Today I headed to NYC! I’ve been doing some research and I am thinking about a possible career/life change.
In order to get to New York I first drive to the train station. This was my morning’s eats. Half a bagel with cream cheese and an apple.
And a green tea energy drink that I got at Wegmans. I wasn’t too thrilled with the flavor of it at first but the more I drank the more I liked it!
I really had a perfect day! The weather was great and my train arrived within minutes of me getting to the train station on the way there and back!
So why was I headed to New York?
To check out the Italian Culinary Academy! The school was gorgeous! And there are so many things that I like about it. I even got a little choked up when we saw the demonstration area where students sit and watch different chefs teach. It just seemed so surreal and amazing.
There really isn’t any reason that I wouldn’t go aside from the cost of the school. I really think it is a career path that I am meant to be traveling down. It would just be so hard to tack on more loans to my already outrageous loans. Then again, if you have dreams…shouldn’t you go after them?
While I was in the city I took full advantage of some shopping! There were great street vendors selling really cute jewelry so I bought some pieces. I’ll have to take pictures of what I bought!
I also came across this gem! Baked by Melissa is the cutest cupcake stand ever! The cupcakes are so teeny tiny and come in amazing flavors!
Hello piece of heaven!
On my way back to the train I just started walking. I wasn’t lost, I just wasn’t trying to find my way in a hurry.
I’m so glad too because there were so many great things to see!
I kept holding out for something to eat because I wanted to find something really good. So glad I did because I stumbled upon Gobo!
The name of the restaurant immediately caught my attention. I didn’t want to sit down because I was by myself so I saw if they did takeout. They did :)!
Gobo is a vegetarian restaurant and although I am not a vegetarian, the menu sounded awesome!
I had a delicious iced green tea.
It was so cozy and country-ish in there! I felt like I was sitting in my own kitchen - I loved it!
I didn’t have a chance to eat until I was on the train but I was excited to finally eat!
Yucca and yam fries with homemade ketchup.
Most delicious veggie burger I ever had.
So good! I would love to go back to Gobo and try more food!
Then I went to my Aunt’s where we sipped on bay breezes and had a bbq! I relaxed and didn’t take pictures. I worked again tomorrow and then have a long run planned!
