I hope everyone had a great Wednesday! It’s the middle of the week, yayyy! I accomplished a good amount today. Paid a bunch of bills, returned some things that I’ve been meaning to return forever and visited Jay!
For lunch I made some angel hair pasta with some sauce and fresh mozzarella. Anddd I decided to try out some fried green tomatoes!
I’ve had fried green tomatoes at a restaurant before but never tackled making them myself.
I made them the same way that I’d make eggplant. Just sliced up the tomato, threw it in some egg and then bread crumbs! I then cooked them in a little olive oil. A little bit goes a long way! And I try to limit my oil usage but you really need the olive oil flavor when you’re making something tasty like fried green tomatoes. Plus, I wouldn’t be real Italian if I didn’t.
It was a great lunch!
After running my errands and taking Sandy for a nice long walk I headed to hang out with Jay. He grabbed us pizza from one of the best pizza places!
We each got personal pizzas. I had to retrain myself from eating the whole thing.
I also had a side salad with some balsamic dressing. I wish restaurants would use a better variety of veggies in side salads sometimes!
Speaking of, today I stopped in the OG for a few minutes. One of my friends told me that he had a salad the other day and went on to describe what was in his salad which included something along the lines of, “leafy greens, sliced almonds, strawberries, a raspberry vinaigrette”. It always makes me laugh/happy that people think of me when they have good food! I always love a good food story :)
Tonight was a great night! I spent time with my two good friends from work and we had an awesome time.
First, we went and got our nails done. They both got pedicures and I was jealous because I really wanted to get one! But my feet are still so banged up and I didn’t want to push it. So I got a manicure instead :)
For dinner we went and got sushi! Beth knew about a place where there was half off sushi!
I had green tea and water to drink. They refilled my green tea twice so I had a lot to drink!

We also shared some edamame that I forgot to take a picture of!
I had three rolls: California roll, shrimp tempura and a spicy crunch tuna roll. Everything was delicious!
I’m so lucky that I made such amazing friends at work and that we can have so much fun together. And share delicious meals together :)
When I was little english muffin pizzas were a common lunch. And why not? They are delicious, easy and fun to make. So when I was trying to figure out what I wanted for lunch today and I spotted the english muffins on the counter…
The lunch light bulb went on and my meal was born!
I topped my english muffin with L.E. Roselli’s Pizza Sauce, which is actually a locally produced product! There was also some fresh mozzarella slices and peppers and onions. Oh and I threw some oregano on top of it all! I wouldn’t want to insult my Italian ancestors for not including the oregano.
To say that this was delicious would be an understatement! So go ahead, bring back your childhood memories and make yourself an english muffin pizza :)
So last night I found myself dreaming about what I would have for lunch today. When I visited Gobo in NYC a few weeks ago I had a really good veggie burger and wanted it again! Because I couldn’t just pick myself up and head to New York I searched all over the internet in search for an acceptable replacement and I found this:
The Ultimate Veggie Burger Recipe. I’m glad that I found Heidi’s recipe and her blog because she is definitely worth checking out! Her recipes are awesome and her photos are really beautiful.
So I went ahead and tweaked the recipe just a little. I wound up leaving out the cilantro and added mushrooms and roasted red pepper to my burger.
I could tell by the consistancy that the burgers were going to turn out really well!
And it made a ton of burgers. So I wound up wrapping a bunch up and freezing them for later.
Oh, and I cut the recipe in half. So normally this makes 12 burgers.
Mmmhmm! Topped with avocado and alfalfa sprouts and some sweet potato fries on the side.
I needed a colorful, healthy meal on such a dreary day.
Another route? Sandy took the opportunity to just embrace the weather and napped the day away :)

On Saturday I ran some errands and picked up a slice of tomato pie from a produce place by my house. I’ve always wanted to try it and finally did!
It was more pie-ish than I thought it would be but it was delicious!
Mmmm check out all those layers! From what my taste buds could tell it was tomato, ricotta cheese, mozzarella and oregano in a flaky crust.
The weather was so confusing this weekend! It was nice, hot and sunny yesterday. And there are still tons of fresh tomatoes waiting to become ripe still hanging out on our deck.
And a beautiful hibiscus still blooming.
I also went to a 1st birthday party for my friend Rian’s daughter, Teagan!
Of course the food was delicious :)
And everything was decorated so cute!

I also went for my first run today since the half. It went well and my feet didn’t hurt so I was happy. I was glad that it felt pretty easy and I wasn’t super winded. I don’t know why I thought it would be hard!
And now it is chilly and windy. I’m a happy camper because I love fall so much! Just as long as the really cold weather stays away for awhile and I’ll be happy :)
I apologize for being MIA! My routine has been all out of week this week and I am looking forward to starting fresh next week. In the meantime I’ll share some of my eats from the past few days :)

Lemon and Leek Chicken with Bow Tie Pasta! I found this recipe in Cooking Light and it turned out delicious. I will have to post the recipe this weekend :)
So there have been good eats in my week. This weekend will be work filled and I know that next week will bring lots more time to play.
