Cleanse.

Wow, what a busy day!! I didn’t even have a minute to post about my lunch so I will fill you in now.
Lunch was an old favorite… tuna cakes.
All you need is:
•1 can of tuna
•1/4 cup chopped onion
•2 TBS miracle whip or mayo
•3-4 TBS breadcrumbs
You can also add things like celery, carrots, peppers…the possibilities are endless!
Sounds kinda weird but it is very similar to a crab cake, yet it is a lot easier and cheaper.
Chop everything p and mix it together. Then you make them into patties and throw them in a pan with a little cooking spray. Let them cook for about 5 minutes on each side. It should yield 2 cakes.

I put my tuna cake over a salad. I used to make these a lot in college because they were so easy to make and I always had the ingredients.
I also had some All Bran crackers with hummus, cucumber slices and carrots. Perfect things for dipping!
This was the first time I tried Athenos brand hummus and I was really satisfied with the flavor and texture. I am glad I tried the original version because it was really garlicky. I can’t imagine what the garlic flavor tastes like!
After work I hopped on the treadmill and ran 5 miles. I’m starting to prefer running outside but running inside on hot days is a lot more manageable. Plus, I watched Friends as I ran which made the time go by really quickly! I have to remember to ice my knees before I go to bed because they were feeling a little achy. Good thing I have tomorrow off from running to rest.
I made dinner for the family tonight!

I roasted some peppers on the grill using the side stove. It was the first time I tried it and it was really fun! I also loved being able to cook more than one thing at a time and having the ability to control the heat.

I made feta stuffed turkey burgers topped with roasted red pepper and grilled onions. On the side we had some Trader Joes sweet potatoes and some zucchini. The zucchini was actually left over from the bread. I overestimated just a tad so I sautéed it with a little seasoning and it was delicious!
Dinner was a success!
As if I didn’t do enough in the day with work, working out and making dinner I decided to dive head first and clean my room. It is definitely a work in progress and it may take quite some time. I just don’t understand where all this stuff comes from!?!? It is in desperate need of a revamp and I need to just get rid of things without holding onto memories. I am such a sucker for memories! I’d love to have a clean, simple and contemporary room, so that is my goal. In the next month I’m going to paint it too so I need to decide on a color scheme…suggestions are welcome :)
I’m going to go hop in the shower and get some much-needed rest!
