Have you ever pondered what to eat and really listened to your appetite? I find myself doing this quite often. I’ll run through a little mental list in my mind of potential things to eat and if I’m in the mood for that particular food. Listening to what your taste buds are wanting usually prevents overeating and usually it is your body just needing particular nutrients.
The other day I was trying to do some recipe research when I just thought, hm, I’d really like something warm, cheesy and with vegetables. The more I thought about it the better it all sounded, until I came up with this simple recipe!
Cheesy Stuffed Portabella Mushroom
Serves 1
You will need:
1 portabella mushroom
1/4 cup goat cheese crumbles
1/2 red pepper
Fresh rosemary
2 tablespoons Italian breadcrumbs
2 tablespoons part skim mozzarella
1.) Begin by cleaning the mushroom. I simply use a damp paper towel to wipe it down, and then take out the stem.
2.) Pour goat cheese crumbles into the mushroom cap. Top with rosemary. You could chop the pieces up but it will melt into the cheese anyway.
3.) Top with half of a roasted red pepper. You can either use store bought peppers or make your own.
4.) Next, top with bread crumbs and then mozzarella cheese. Bake at 375 degrees for 20 minutes! When finished the mushroom will be cooked but still firm.
The meaty texture and flavor of the mushroom made it hearty and a perfect meal on a cool day. And as the cheeses melt with the breadcrumbs they create a stuffing-life filling and a crispy top! Was it exactly what I was in the mood for? You betcha! And I bet you’re going to want to try it too!
