This recipe is simple, delicious and easy!
When I was in college I tried to eat healthy and I always craved mashed potatoes and thought, hmm I wonder if there could be a substitute. So I came up with this simple recipe and have been hooked ever since! It really has the texture of mashed potatoes and is a great way to get some veggies in! Whenever I would make a batch of this my roommates and I would gobble it up in one sitting.
Here is what cauliflower mashed potatoes entails:
•1 head of cauliflower
•1/2 cup onions
•1 clove of garlic
•1/2 cup skim milk
•1 T smart balance butter
•salt, pepper, dill weed
1.Preheat oven to 450. When the oven is heated, place glove of garlic on a piece of foil until it becomes soft. When the clove is finished, remove skin and set aside.
2. Wash and cut the cauliflower into chunks.
3. Steam the cauliflower until soft and drain the water when finished.
4.While the cauiflower is steaming, sautee the onions. I use the cooking spray to omit extra fat.
3. Put the cauliflower in a food processor with milk, onions, garlic and smart balance, blend until creamy. Depending on the thickness that you like you may want to blend less or more.
4.Place in a casserole dish and top with dill weed. You can use different toppings such as bread crumbs, cheese, paprika. Bake for 35 minutes or until top becomes browned and crispy.
This is a great way to eat some veggies and to trick yourself into thinking you’re eating mashed potatoes! I do know that there are some recipes that actually call for a potato to be involved but I think it is delicious without any at all!
